Danish Morning Buns (Brusebadsboller)
Ingredients
625g all purpose flour
500g warm water
10g yeast
½ tbsp salt
In a large bowl, dissolve the yeast in the warm water and let it sit for a few minutes. It should smell a little like beer.
Add in the flour and salt and mix well--10 minutes in a stand mixer or by hand.
Cover with plastic and let the dough rise in the fridge overnight.
Wake up, hop outta bed, and crank the oven to broil.
While the oven preheats, scoop out and roll about 10 balls. Fold and pinch the dough underneath so the tops are taut and arrange on a parchment paper-lined baking sheet.
Let the dough balls rise for a few minutes and then score the tops with a razor or sharp knife.
Place the baking sheet in the oven and drop the temperature to 440° and bake for 20-25 minutes.
